five ingredient meatball soup for one


ugh. yesterday was a crappy day. There was zero sunshine, classes were slow, and by the end of the day I had an overwhelming desire to round up all of the blankets in our apartment, pile them onto my bed and then make a cozy warm burrito of myself. Needless to say, I didn’t make it to the store to do any food shopping.

My original plan was to spend some time after class standing in the long line that led to our freshly opened uptown Chipotle. Free burrito day would have solved the empty pantry situation, at least for last night’s dinner, but I passed up the wait in the rain for a nap.

When I woke up from my nap, I was feeling a little better so I took some blankets with me and sat my burrito self down in front of my computer for some e-mail reading. After sorting through the junk I came across this recipe in a newsletter from About.com. Freshly inspired I rolled over to the kitchen and cooked up this lovely meal.

Five Ingredient Meatball Soup
for one

ingredients

• 1/2 cup of marinara sauce

• 1/4 cup of water

• 4 - 5 frozen meatballs

• left over pasta

parmesan cheese


Tools

• small sauce pot


Steps

• in a small sauce pan combine marinara sauce, water and meatballs

• bring to a simmer then add in the pasta

• stir until everything is heated

• pour into the biggest mug you own

• top with a few shakes of parmesan cheese

 

It was wonderful! I ate it all up while I watched Are You Smarter Than A Fifth Grade and I felt happy about life. Hurray for comfort foods and bad TV!
