how to: make a meal from Chipotle last 3 days

On Sunday morning two of the water mains in Athens broke causing most of campus and uptown to go without water for the day. I found out via an email sent to all OU students, but the break did not affect my street. It did leave Aaron’s apartment without water for a few hours.

Since there was a boil alert, we were not going to cook anything so we decided to venture uptown for dinner. We ended up at the new Chipolte on Court St. It was our first visit since it opened and In high school my friends and I went to Chipotle about three twice a month and I never had trouble finishing a burrito or a bowl. On this trip I ordered my usual vegie bowl, but I had a lot of trouble finishing it. It actually took me three days to eat the entire bowl! (I’m eating the remains for dinner as I type.) Money spent once turned into three separate dinner, pretty savvy huh? Meal stretching, for college kids!

Meal 1: Go to Chipotle and order a burrito bowl. Fill it up with whatever ingredients you wish and grab a nice seat with a view. Before eating your delishas bowl of mexican goodness drink a bottle of water. This will a. hydrate you, b. fill your tummy so you don’t over eat, c. keep your skin healthy, d. get your brain working, etc. If you ordered lettuce or guacamole on your burrito make sure to eat all of these ingredients because they don’t fare well in the fridge. Try to only eat around one third of the bowl and take the rest home with you.

Meal 2: Grab your leftover burrito bowl out of the fridge along with a head of iceberg lettuce. Divide what is left in your bowl in half. Scoop one of the halves into a lettuce leaf and roll it up like a burrito (before rolling your lettuce burrito you could possibly warm the filling in the microwave, but the rice gets hard and crunchy). This lettuce wrap is best with a side of tortilla chips and pink salsa. Don’t forget to drink your water!

Meal 3: Wow, you made it through two whole meals without eating the entire bowl, go you! Okay so the third day is the toss day so make sure you eat all of the leftover yummy bits of your burrito bowl. The best way to do this is to make a quesadilla. Fill a room temperature tortilla with the remains of your burrito bowl and a good amount of shredded mexican cheese then top it with another tortilla. At this point you can heat it with whatever appliances you have (microwave, skillet, George Forman, etc.) Make sure the tortilla is warm and the cheese is gooey.

So its not hard to take a $5 burrito bowl that would add up to 785+ calories in one sitting, and stretch it out into three tasty meals. Even though mine lasted three days, this could be a one-day event (breakfast, lunch and dinner) perfect for Cinco de Mayo.
